This morning as I was tending to my garden, I saw a few zucchini hiding under the heavy leaves that accompany the plant. Two of them were of normal size that you would find at the grocery store. Actually, they were bigger than what I see at the store, but I decided to leave them to gain some girth when I spotted this huge feller! An 8.2 pound zucchini!
I haven’t been doing anything odd with my garden, though have been finding abnormally large vegetables. Actually, there has been absolutely NO contact with anything chemically made by the large chemical corporations (sorry, Monsanto). In the early weeks, I fertilized with used coffee grounds (apparently the caffeine in Starbucks coffee gives the plants a little jolt), and when my chili peppers came in, I put them into a spray bottle with water and a little vinegar to use as an insect repellent.
So what is a girl to do with this zucchini? Here are some recipes that I have both tried and will attempt to try!
I have also made Zucchini Pizza Boats by adding fresh basil, peppers and tomatoes from my garden with some pizza sauce and cheese.
